Caramel at Bellagio is a great choice for a late-night destination. The bar features sleek, sophisticated decor including two signature opaque marble tables, hand-blown glass sculptures, dark leather couches and a round ottoman perfect for group gatherings. Even though the windows in Caramel allow patrons to view the bustling casino outside, the crowd in the casino can't see in to the bar, and the noise is nicely filtered out. Caramel offers a selection of wines, champagne, beer and standard cocktails, but this is one bar where you have to try a specialty martini. Caramel also offers a light food menu, which includes shrimp cocktail, pâté, smoked salmon, an assorted cheese plate and Caprice salad. Food prices average $13.
