Features: Simon Restaurant and Lounge's chic and modern space is complimented by floor-to-ceiling windows with unobstructed views of the the trendy Palms Place pool. In addition to the great views of beautiful sun worshipers, Simon's menu is also worth a double-take with fresh ideas for breakfast, lunch, and dinner.
Why We Dine: We love the emphasis on fresh, organic ingredients. In fact, behind the sushi bar diners get a first-hand glimpse of Chef Simon's sustainable ingredients philosophy with a glass-encased herb garden from which the kitchen staff clips fresh herbs.
- Happy Hour: Take advantage of 25% off the sushi menu during their popular happy hour Monday-Friday, 4pm-7pm.
- Sunday Brunch: With a gorgeous spread of culinary delights and all-you-can-drink Bloody Mary Bar, this is one of our favorite brunch spots in Las Vegas. Brunch is served Sundays from 10am - 4pm.

Simon Restaurant & Lounge/Poolside is a blast
Are you kidding me... Sunday Pajama Brunch at Simon Poolside! INCREDIBLE!!!!!!!!!!!!!!!!!!
Sushi Bar, Bloody Mary's, Mimosa's... Need I say more??? We laughed the entire time and probably made quite a scene with what little pajamas we were wearing. Anything goes in Vegas, right??? Just one big party from morning til night.. Make sure you try the Crispy, Creamy Shrimp and the Tuna Tartare. I am getting hungry just thinking about it. You won't walk away from this brunch (literally) hungry- They fill you up and it is a blast!

Simon Poolside is DELISH!
This was such a pleasant surprize to find out about this great restaurant. The sushi was sooo fresh and beautifully creative! It truely blows me away when you go to a sushi restaurant and the chef is able to present you with something you've never seen or eaten before...that is what you get with the food at Simon's. The decor and setting is warm and beautiful. The servers, as well as the chef, were friendly and attentive.
I look forward to eating here again the next time I am in Las Vegas.
